Blackfoot’s American Wheat is hybrid of a German Hefeweizen and an American Wheat ale. We did a blended fermentation with our house ale yeast and a German Hefeweizen yeast to create a profile of banana, clove, and citrus. To bring out the citrus we heavily hopped the end of the boil with Mandarina Bavaria, Amarillo, and fresh orange zest and then “dry hopped” with 6 gallons of fresh orange juice. The nose is all Hefe but the taste is a blend of that and strong citrus with a slight citrus bite in the finish.
